. Dadih is the result of fermented milk made in bamboo and covered with banana leaves on top, then allowed to stand for approximately 24-48 hours. This study aims determine effect various doses lime juice (Citrus aurantifolia) manufacture dadih nutritional content (water content, fat protein carbohydrates pH).This research method used a completely randomized design (CRD) 4 treatments 5 replications. The were dose juice, namely P0 = 0% Control only buffalo without lime, P1 1% P2 3% P3= 5% juice. Based results, it known that addition (10 ml) every 200 ml optimal treatment water pH.
